Chunky Monkey Smoothie

This creamy, low-sugar smoothie blends ripe bananas, reduced-sugar vanilla yogurt, milk, and cocoa powder for a rich chocolate-banana flavor students love. Each 10-oz serving provides 8 grams of protein, 5 grams of fiber, and ½ cup of fruit, supporting meal pattern requirements with no cooking required. Easy to batch, prepare and serve chilled, it offers a nutritious, ready-to-go breakfast or snack that delivers familiar flavor with less added sugar.

Instructions

  1. Freeze bananas at least one day prior to service. To freeze, peel bananas, and lay on lined sheet pans in a single layer. Cover and place in the freezer overnight. Once frozen, bananas can be stored together.
  2. Place yogurt, fresh bananas, frozen bananas, cocoa powder, vanilla extract (optional), and milk in a 5 gallon bucket. Blend using an immersion blender until pureed and smooth.
  3. Pour 10 fl oz smoothies into 12 fl oz cups. Hold and serve at 41°F or below. Serve one smoothie to each student.
