These Mini Mac and Cheese Bites are creamy, cheesy, and so easy to prep ahead for busy days. Made with real dairy ingredients, they’re a fun way to bring a comforting, kid-friendly favorite into lunchboxes and everyday routines.
Instructions:
- Preheat oven to 375°F. Grease a 12-cup muffin tin.
- Cook pasta until just al dente, drain, and set aside.
- In a blender, combine cottage cheese, sour cream, egg, 1 cup cheddar, Parmesan, garlic powder, onion powder, paprika, salt, and pepper. Blend until smooth.
- Toss pasta with the sauce. Spoon into muffin tin.
- Top each cup with remaining cheddar and a sprinkle of paprika.
- Bake for 18-22 minutes, until golden and crispy on the edges.
- Let cool for 5 minutes before removing from the pan. Serve warm or pack for later.
