Mini Mac and Cheese Bites

These Mini Mac and Cheese Bites are creamy, cheesy, and so easy to prep ahead for busy days. Made with real dairy ingredients, they’re a fun way to bring a comforting, kid-friendly favorite into lunchboxes and everyday routines.

Instructions:

  1. Preheat oven to 375°F. Grease a 12-cup muffin tin.
  2. Cook pasta until just al dente, drain, and set aside.
  3. In a blender, combine cottage cheese, sour cream, egg, 1 cup cheddar, Parmesan, garlic powder, onion powder, paprika, salt, and pepper. Blend until smooth.
  4. Toss pasta with the sauce. Spoon into muffin tin.
  5. Top each cup with remaining cheddar and a sprinkle of paprika.
  6. Bake for 18-22 minutes, until golden and crispy on the edges.
  7. Let cool for 5 minutes before removing from the pan. Serve warm or pack for later.
