Atol de Elote
(Sweet Corn Drink)

Atol de Elote is a traditional warm, sweet corn-based beverage with roots in Mesoamerican cuisine. It is especially popular in Central American countries including El Salvador, Guatemala and Honduras, where variations of the comforting drink have been enjoyed for generations.

Instructions

  1. Add 5 cups of corn kernels to a blender. Reserve some kernels for an optional garnish.
  2. Add a splash of milk and blend until smooth.
  3. Place a fine-mesh strainer over a medium-sized mixing bowl. Pour the blended corn into the strainer and press the mixture through using the back of a spoon or spatula.
  4. Add the sugar and salt to the strained corn mixture and stir to combine.
  5. In a large saucepan, heat 2 ½ cups of water and 2 cups of milk over medium heat until the mixture begins to bubble, stirring often to prevent burning.
  6. Add the corn mixture to the saucepan, reduce the heat and stir to combine.
  7. Simmer for about 5 minutes, or until the mixture begins to thicken.
  8. In a small bowl, stir together the cornstarch and ½ cup of water until smooth.
  9. Pour the cornstarch mixture into the simmering atol and whisk until creamy and thickened.
  10. Pour into mugs or bowls and garnish with ground cinnamon and reserved corn kernels.
