Yield Makes 2 personal-size pizzas (cooking only 1 pizza at a time)

Instructions

  1. Works best in large oval 6-8 quart slow cooker. 
  2. Cut the 1 pound pizza dough into two sections. 
  3. Roll and stretch one section of dough into an oval 2 inches longer and 2 inches wider than the crock of the slow cooker. Sprinkle with cornmeal or flour and press into both sides of the crust. 
  4. Use the edges of the parchment paper to lower the crust into the crock. 
  5. Add sauce and toppings of choice. 
  6. Lift and stretch the sides of the dough so they stand up past the cheese (creating the deep-dish effect). 
  7. Cover the slow cooker with a long piece of paper towel. Then place the lid over the paper towel and pull it tight (paper towel helps catch excess moisture). 
  8. Slow cook the pizza on high for 2-4 hours checking the progress throughout. 
  9. When ready to serve, lift the pizza using the edges of the parchment paper. 
  10. Let cool, cut, and serve. 
  11. Repeat with 2nd portion of pizza dough.
