Smoothie Bites and More: Innovative Dairy Ideas for School Breakfast

Our foodservice team was researching new ideas for breakfast to keep the students interested in coming in, and we came across the idea of smoothie bites.

We liked the concept of a grab n- go breakfast item for the students that come in late and needed to adjust the recipe to offer it as a reimbursable meal. With some trial and error, we came up with the recipe below. We chose to feature Strawberry Smoothie Bites for this blog, because we had strawberries on hand but you can choose other fruit options. We’ve also used coconut, mini chocolate chips, nuts, and sprinkles along with the granola for toppings. 

Along with yogurt bites, our daily breakfast offerings include frozen smoothie bowls, a yogurt parfait bar with toppings, and a variety of milk and yogurt smoothies blended with fresh fruit. These new items are going over well with the students and are becoming some of their favorite choices for breakfast. Here’s what we offer: 

  • One to two smoothie options daily. (Pictured above: Falcon Nest Winter Escape and Blood Orange)
  • Open top freezer with cups filled with scooped frozen smoothiesFreezer filled with two different flavors of frozen yogurt smoothie bowls to complement our parfait station. We scoop Cabot Greek yogurt into bowls and freeze overnight. 
  • Yogurt Parfait Bar with variety of toppings (pictured below).
  • Our Blueberry Smoothie Bites. We mix up the fruits featured in the recipe each week. See below for recipe.
Strawberry Smoothie Bites Recipe:

Note: You may use any choice of fruit you would like. We also have used coconut, mini chocolate chips, nuts and sprinkles along with the granola recipe found below for toppings. 

Ingredients: 

  • 17.5 lbs container of Cabot Vanilla Greek Yogurt 
  • 10 lbs Frozen Strawberries, Diced 
  • 1 1/2 cups Vermont Maple Syrup 
  •  3 quarts (12 cups) of Granola (we make our own recipe) 

Suggested Equipment: 

  • One 20-quart container 
  • Immersion blender 
  • 13 full sheet pans  
  • Spatula 
  • #30 scoop 

Instructions: 

PREP: Grab sheet pans to have ready for scooping yogurt mixture along with other equipment and ingredients.  

Step 1: In a 20-quart container, add yogurt, strawberries, and maple syrup. 

Step 2: Blend yogurt mixture together well with an immersion blender.   

Step 3: With a 30# scoop, put 32 scoops of yogurt mixture onto each full sheet pan. 

Step 4: Top each scoop with 1 Tablespoon of granola. 

Step 5: Place sheet pans on a covered speed rack and place in the freezer overnight.

Step 6: Use spatula to put 8 smoothie bites into each container and serve.

How the Strawberry Smoothie Bites credit:

This recipe makes 52 servings, and each serving is credited as 1oz. protein, 1oz. grain, 1 cup fruit  

Helpful Hints:

We like serving this with our from-scratch Maple Granola recipe.

Ingredients:

  • 12 cups of Old Fashioned Oats ( 1 container of oats = 2 lbs 10oz.) 
  • 1 Tablespoon Cinnamon 
  • 1 teaspoon salt 
  • 1 1/3 cup maple syrup 
  • 3/4 cup canola oil 
  • 1 Tablespoon vanilla extract 

Instructions:

  • Mix all ingredients together.
  • Bake in a 300F degree oven for 20 minutes until golden brown.
